Banana and Oat Pancakes
- 1 medium ripe banana
- 2 tbsp maple syrup
- 1 tsp baking powder
- 1/2 cup plant based milk
- 1 cup rolled oats
- 1 tsp vanilla
- Place all of the ingredients into a blender or food processor and blend until smooth.
- Brush oil onto a non-stick pan and put on a medium heat.
- Add the batter and cook until the edges are golden (about 2-3 mins) then flip and cook the other side for a further 2-3 minutes. Continue until the batter is used up.
- Serve with maple syrup and your choice of fruit toppings.
